Filo wrapped manouri

Feeds 2 as a starter

3 sheets filo pastry
60g unsalted butter, melted
170g Manouri cheese
2 sprigs thyme, leaves picked
½ teaspoon smoked chilli flakes
1 teaspoon white sesame seeds

2 tablespoons Greek honey


Lay 1 sheet of filo pastry vertically on the kitchen bench and brush with butter all over, continue with remaining two filo pastry sheets and butter.


Add the manouri to the center of the pastry and scatter with thyme leaves and smoked chilli flakes and fold filo pastry over to cover and brush with butter. Fold over one last time to enclose and brush both ends with butter and fold them over to enclose. Scatter with sesame seeds.

Preheat the oven to 180°C. Place the wrapped Manouri onto a baking tray and bake in the oven for 15 - 20 minutes or until golden and crispy.

To serve, drizzle with honey.
